QUICK AND EASY PAD THAI

I know the whole point of takeout is to be lazy and not cook/clean buuuut I have to say, this recipe will be worth your while. This easy homemade version of Pad Thai takeout is incredibly tasty and ready to make in 30 minutes. The perfect combination of sweet, spicy and nutty!


Prep time: 10 mins

Cook time: 30 mins


Ingredients

  • 4 tbsp of coconut oil

  • 2 garlic cloves, minced

  • 4 shallots, thinly sliced

  • 8 oz of chicken breasts, diced

  • 2 eggs, lightly beaten

  • 1 package of rice noodles

  • 1 cup of bean sprouts

Sauce

  • 4 tbsp. of lime juice

  • 3 tbsp. sugar

  • 3 tbsp. of fish sauce (optional)

  • 1 tsp. of crushed red pepper flakes

Garnish

  • 3 tbsp. of fresh cilantro, chopped

  • 3 tbsp. of roasted peanuts, chopped

  • 3 tbsp. of scallions, thinly sliced

  • 1 lime, cut into wedges

Instructions

  1. Heat pan over medium heat to melt 2 tbsp. of coconut oil

  2. Add in garlic, shallots and diced chicken breast

  3. Set aside once chicken breast is fully cooked

  4. Add remaining 2 tbsp of coconut oil and two eggs, then scramble

  5. Reduce heat to low; add sauce and noodles

  6. Toss until mixed, add chicken breast and bean sprouts

  7. Garnish with cilantro, peanuts, scallions and lime
